There are several plants which were pickled as 'samphire' in the past, the main species being Rock Samphire (Crithmum maritimum). Generally speaking what is sold in shops today as samphire is marsh samphire, or glasswort (Salicornia europaea) which is a quite different plant.

SO the first recipe below shows the pickling process for rock samphire, followed by an 18th century recipe that shows how samphire was used in the kitchen as an ingredient.
